根據聯合國政府間氣候變遷專門委員會（IPCC）日前發布最新氣候變遷報告指出，全球升溫攝氏1.5度恐提前發生，全球暖化將直接造成氣候系統的改變，包括極端高溫、豪雨、乾旱…等。聯合國農糧組織（FAO）所做統計資料指出，二氧化碳最大的製造者是畜牧業。

每年11月25日是「世界無肉日」，又稱「國際素食日」，台中榮總嘉義分院李蕙娟營養師鼓勵大家可以從「週一無肉日」「素素」看，開始減少二氧化碳的製造，除了為地球盡份心力，也為身體健康加分，每一個人減碳一小步，是地球的一大步。

李蕙娟營養師請大家在「世界無肉日」可以「素素」看，減少肉品的消費，降低個人二氧化碳的製造量，減碳愛地球，有助於延緩全球暖化。

李蕙娟說明，吃素對身體健康有許多好處，常吃富含卵磷脂、植物固醇、異黃酮素等黃豆類製品，如：豆腐、豆干、豆包、豆漿、素雞等)，可幫助代謝壞的膽固醇，預防血管硬化，具有保護心血管的功能遠離三高慢性疾病。每週吃 3 次黃豆製品取代肉類，有助修復受損的腦細胞，進而促進腦神經的訊息傳遞，預防失智都有正面的幫助。

中榮嘉義分院營養科結合社區營造中心執行健康促進店家輔導計畫，今年也將健康飲食概念推廣到素食小吃店，教導民眾如何運用國健署推廣的「我的餐盤」，簡易六口訣「每天早晚一杯奶、每餐水果拳頭大、菜比水果多一點、飯跟蔬菜一樣多、豆魚蛋肉一掌心、堅果種子一茶匙」，讓民眾利用拳頭、掌心即可暸解每餐六大類食物要吃的量；並將素食店家實際供應的黃豆製品運用在每餐一掌心的概念，來了解攝取的份量好記又不易混淆，最後製成海報張貼在店家讓健康均衡的飲食概念更生活化。
