韓國好媳婦勇追夢　異鄉做出故鄉好滋味

姜旼廷努力研發製作道地的韓式泡菜。

有去過韓國旅遊的人，對當地美食韓式泡菜（正式譯名為「辛奇」）一定不陌生，來上一口，香辣的口感令人直呼過癮。由於疫情的關係不能出國品嚐到異地美食，在台灣就可以嚐鮮囉～

一位來自韓國慶尚南道昌原市的姜旼廷，8年前嫁來臺南定居。她的母親每年都會來臺探親，也會順道帶來自製的家鄉風味泡菜，但自從此次疫情爆發以來，母女雖仍可透過電話聯繫，只是姜旼廷很想念媽媽，也懷念起家鄉的泡菜，因為在韓國，泡菜可說是司空見慣，每一個家庭三餐都少不了它！然姜旼廷認為，市面上販售的泡菜雖多，而口味就是沒有媽媽的味道，於是興起了自己製作泡菜的念頭。

擁有好手藝的姜旼廷同時也擅長料理辣炒年糕等韓國傳統美食。

姜旼廷對於食材有所堅持，一定要選用韓國進口的大白菜、魚露及蝦醬，為此還經常跑到雲林西螺的果菜市場去採買。不過她初期做出來的味道及口感並不符合自己的要求，經常整批都必須丟掉，一連串的失敗，加重了她的挫折感，使她一度想要放棄。所幸在家人的鼓勵下，憑著不斷的努力研發改進，像是調整食材與調味料比重，採用傳統天然發酵，及添加蘋果、水梨層次感等方式，才終於製作出道地的韓式泡菜，讓品嚐過的親友都讚不絕口。

此外，家傳好手藝的姜旼廷，同時也擅長料理韓式辣蘿蔔、辣炒年糕及部隊鍋等韓國傳統美食。姜旼廷說：「其實我的心願是未來能開設實體店面，將親手製作的各種家鄉美味和更多臺灣朋友分享，同時也向韓國親友推廣麻豆文旦等在地農產品，用美食促進兩地文化交流。」
