炎熱夏天素素看 大林慈濟營養師推「芒果莎莎通心麵」

現在是愛文芒果的產季，不僅價格實惠，更含有豐富的營養素。嘉義大林慈濟醫院營養治療科營養師張雅芳與實習生楊巧敏合力推出當令的「芒果莎莎通心麵」，五彩繽紛的配色與清爽的口味，正適合炎熱的夏天品嚐。
張雅芳表示，芒果含有高含量的天然抗氧化物玉米黃素、槲皮素等植物多酚，含量高的天然抗氧化物，可以降低罹患癌症的風險，也有助於清潔肝臟中的毒素。芒果還含有豐富的ß-胡蘿蔔素（每100g含有1920I.U的維生素A），ß-胡蘿蔔素可於體內轉換成維生素A，能有效預防癌症，使細胞良性分化，愛文芒果的ß-胡蘿蔔素佔所有芒果品種之首。
張雅芳表示，芒果中促進腸道蠕動的膳食纖維含量高（0.9g/100g），有助清除消化道內的廢物和毒物，從而有益腸道內有益菌的生長，保護消化系統，也有助於降低血清中的膽固醇。
張雅芳營養師也提醒，芒果屬於中GI的水果（GI:59~61），醣類較高，所以糖尿病者要注意食用的量，每日水果建議量為1至2份，1份約為一個手掌大或小碗八分滿。

芒果莎莎通心麵食材(10人份)︰
- 通心麵250g、莎莎醬、愛文芒果300g(一顆)、酪梨150g(一顆)、馬札瑞拉起司絲50g、巴西利5g
- 莎莎醬︰牛番茄3顆、九層塔10g、辣椒兩根、酸黃瓜兩條、調味料（檸檬汁50ml、黑胡椒、糖、檸檬皮、鹽、橄欖油）
做法︰
- 莎莎醬︰番茄川燙去皮去籽後切丁、九層塔川燙後切碎、酸黃瓜切碎、辣椒川燙後去子切末，加入調味料混合均勻即可。
- 芒果和酪梨切小丁
- 通心麵滾水煮熟，過水降溫
- 將食材與莎莎醬混合均勻即可。
