錦霞樓是台南三大台菜之一的「阿霞飯店」第4代傳人吳健豪,所創立的年輕品牌「錦霞樓」。不但更專注在傳統手藝的展現,讓這樣的傳統名菜能夠保有它元本的風采外,更是顯現歷久不衰的經典。
「紅蟳米糕」已經是錦霞樓代表菜,選用的紅蟳,每隻在5兩以上,並且每日現殺,濃稠飽滿的蟹膏,搭配澎派內餡的米糕,讓人忍不住一口接一口。
台南最具代表性的「鱔魚意麵」,也是錦霞樓的重頭戲之一,爽脆口感的鱔魚,搭配大火爆炒所保留的鍋氣,帶出食材味道新鮮,是最令人念念不忘的滋味。
